Miso-Turmeric Carrot & Ginger Soup
Serves 2–3
Ingredients:
- 1 Tbsp olive oil or avocado oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 1 tsp ground turmeric
- 4 cups chopped organic carrots (about 4 large carrots)
- 3 cups water
- 2 tbs Gevity bone broth - (i like to use "am cleanse" flavour, but you do you!)
- 2 Tbsp white or yellow miso paste (dissolved in ¼ cup hot broth)
- Salt and pepper to taste
- Optional garnish: fresh coriander or parsley
Directions:
- In a pot over medium heat, warm oil and sauté onion until translucent (4-5 min).
- Add garlic and ginger; cook 1 min more.
- Stir in carrots, broth, and bring to a simmer.
- Cover and cook until carrots are tender (15–20 min).
- Remove from heat, whisk in dissolved miso.
- Puree with an immersion blender (or in batches in a stand blender) until silky.
- Season with salt/pepper and garnish.
